Ingredients

  • 1 lb. carrots, peeled and cut into long strips
  • 2 Tbsp. olive oil
  • 1 tsp. smoked paprika
  • Sea salt and black pepper to taste

Method

  1. Preheat oven to 350 degrees.
  2. In a medium-sized bowl, combine carrots and olive oil, and toss to coat. Lay out evenly on a 9×13 cookie sheet and season with paprika, salt and pepper to taste.
  3. Bake for 30 minutes or until browned.
  4. Serve with guacamole, hummus or ketchup.
