- 1 lb. carrots, peeled and cut into long strips
- 2 Tbsp. olive oil
- 1 tsp. smoked paprika
- Sea salt and black pepper to taste
- Preheat oven to 350 degrees.
- In a medium-sized bowl, combine carrots and olive oil, and toss to coat. Lay out evenly on a 9×13 cookie sheet and season with paprika, salt and pepper to taste.
- Bake for 30 minutes or until browned.
- Serve with guacamole, hummus or ketchup.
